Ginger Paste

Ginger is a ubiquitous ingredient in Indian cooking. Having this paste on hand is a great convenience and a good way to store ginger for the long term. You can make this paste and freeze it in advance, and simply drop pieces into your recipe as needed.

This ginger paste is a good substitute for ginger-chili paste if you need to reduce the amount of heat in your dish.

If you plan to use the ginger paste up in the near future, store it in a jar in the refrigerator. It will last about 1 week. Store it flat in a plastic bag in the freezer for longer-term storage. You can score the bag as it freezes and then break off a piece for your recipe. A 1” square about 1/4” thick is about a teaspoon of ginger.
