Quinoa
Quinoa is a pseudo-grain that is closely related to amaranth. Quinoa has become popular lately for its high protein and low carbohydrate content compared to true grains like wheat and corn.
Quinoa originates in South America and is not a traditional ingredient in India. In spite of that, it finds itself at home very easily in Indian cooking, where it can stand in for rice or dals. One example is Quinoa Khichdi, khichdi is a very traditional Gujarati rice and dal dish.
In India, most quinoa is grown in Rajasthan, Andra Pradesh and Uttarakhand.
