Tindora
Tindora, also known as "kundru" in Hindi or "ivy gourd" in English, is a popular vegetable in Indian and Gujarati cuisines. With a crisp texture and mild flavor, tindora is often used in various dishes, including stir-fries, curries, and pickles.
In Gujarati cuisine, it is commonly paired with spices like cumin, coriander, and mustard seeds, creating a delicious blend of flavors.
Tindora is in the cucumber family and closely related to parval (pointed gourd). While parval is slightly sweet, tindora have a tangy and slightly bitter flavor. Both have a crispness that softens when cooked.
