Restaurant-Style Kulcha

With this recipe, it is possible to make kulcha, this wonderful Indian flatbread,  at home, using either yeast or baking soda for leavening -- with methods for cooking on the stovetop and in the oven.

Let's get started.

Collect the ingredients for the KULCHA

Step 1

Activate your yeast. (Follow recipe link for baking soda version)

Step 2

Mix ingredients to form a dough.

Step 3

Knead your dough. Form it into a ball and brush with ghee. Allow to rise.

Step 4

Divide the dough into eight pieces. Form balls and roll each ball out to form kulcha.

Step 5

Brush with ghee. Add toppings such as nigella seeds and cilantro.

Step 6

Heat ghee in a pan. Add kulcha. Add water and cover. Flip. Remove from heat.

Step 7 - Stovetop

Brush pan with ghee. Add kulcha. Add water. Bake in a very hot oven.
