- 2 tbsp ghee
- ½ tsp cumin seeds
- ½ tsp mustard seeds
- ½ tsp turmeric
- ¼ tsp hing (asofetida)
- 8 curry leaves
- 2 cloves garlic (chopped)
- 2 tbsp cilantro
- 2 cups cooked potatoes or other vegetable, chopped
Heat the oil in a pan over medium-high heat
Add cumin and mustard seeds
Allow to fry until they begin to brown and aroma becomes strong
Add turmeric and allow to cook for a few seconds. Then add hing and allow to cook a little more. Repeat with curry leaves, garlic and finally cilantro.
Mix in cooked potatoes or other vegetables, allowing them to cook a little bit so the flavors get integrated.
