  • 2 tbsp ghee
  • ½ tsp cumin seeds
  • ½ tsp mustard seeds
  • ½ tsp turmeric
  • ¼ tsp hing (asofetida)
  • 8 curry leaves
  • 2 cloves garlic (chopped)
  • 2 tbsp cilantro
  • 2 cups cooked potatoes or other vegetable, chopped


  • Heat the oil in a pan over medium-high heat
  • Add cumin and mustard seeds
  • Allow to fry until they begin to brown and aroma becomes strong
  • Add turmeric and allow to cook for a few seconds. Then add hing and allow to cook a little more. Repeat with curry leaves, garlic and finally cilantro.
  • Mix in cooked potatoes or other vegetables, allowing them to cook a little bit so the flavors get integrated.
