Ricotta Pancakes (Malpuda)

Ingredients

  • For Malpuda
  • 1 cup All Purpose Flour
  • 2 tbsp Semolina
  • 1/2 tsp Baking Powder
  • 3 cups Ricotta Cheese
  • 1 1/2 cups whole milk
  • Ghee or Oil for frying
  • For Sugar Syrup
  • 3 cups water
  • 1 1/2 cups sugar
  • 1 tsp cardamom (whole pods or powdered)
  • 1 pinch saffron

Instructions

  1. In a large bowl, stir together the flour, semolina and the baking powder.
  2. Mix in the ricotta and milk. It should be pancake batter consistency.
  3. Heat a frying pan with 2 teaspoons of oil or ghee.
  4. Using a tablespoon measure, fry spoonfuls of batter to make small pancakes.
  5. Cook on both sides till golden brown. Drain on paper towels.
  6. Boil sugar and water together until the syrup thickens and coats the back of a wooden spoon. About 15 minutes.
  7. Soak the malpuda in the syrup for about 30 seconds to 1 minutes and drain on a cooling rack.
  8. Serve with Rabri.
