Walnut Burfi (Gluten-Free Walnut Squares)
These walnut bars are reminiscent of the texture of Mohanthal, a traditional Gujarati sweet, but are gluten-free and super easy to make.

Ingredients
- 4.5 oz walnuts (about 1 cup chopped)
- 1.5 oz almonds (about 1/4 cup whole)
- 1 cup powdered sugar
- 2 tbsp brown sugar
- 1/2 tsp ground cardamom
- 1/2 tsp freshly ground nutmeg
- pinch saffron
- 1/4 cup mascarpone cheese
- 1/8 tsp salt
- 16 whole walnuts for the topping. I used red walnuts.
Instructions
- Preheat your oven to 300 degrees F.
- Line a 9?x9? baking pan with parchment or grease with butter or ghee. Set aside.
- Toss the walnuts, almonds, powdered sugar and brown sugar into a food processor and process until ground into a powder.
- Add the rest of the ingredients and pulse until all of the ingredients come together in a soft dough.
- Transfer the dough into the lined baking pan and smooth out into an even layer using your fingers or an offset spatula.
- Score the dough into 16 even squares.
- Place a whole walnut in the center of each square.
- Bake for 25-30 minutes until golden around the edges.
- Let cool in the pan for about 10 minutes. Remove from the pan and cut along the scored lines while the bars are still warm.
- Serve either warm out at room temperature.
