Suva ni Bhaji | Dill Curry

Ingredients

  • 3 cups dill
  • 1/4 cup moong dal
  • 1/2 cup water
  • 1 Tbsp ghee (or oil)
  • 6 cloves garlic (sliced)
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 1/8 tsp hing
  • 1/2 tsp salt

Instructions

  1. Rinse and soak the moong dal for 10 minutes.
  2. Set the Instant Pot to saute mode. Add ghee and allow it to get hot. Make a vaghar by adding hing, let it sizzle for a few seconds, then add garlic, turmeric, and black pepper. Cook the garlic until it begins to brown around the edges.
  3. Add dal and water. Cook for 5 minutes under high pressure, followed by quick release. Stir and test the dal. It should mash easily against the back of a spoon.
  4. Set the Instant Pot back to saute mode and add dill. Saute until the dill is soft and fragrant, about 5 minutes.
