Carrot Sambharo

Carrot sambharo is a lightly stir-fried, Gujarati carrot salad. This sambharo sticks to the traditional flavors of a sambharo, with a vaghar of mustard seed and curry leaf.

Carrot Sambharo

Ingredients

  • 1/2 pound carrots (peeled and grated)
  • 1-2 green chilies (sliced)
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds
  • 1 Tbsp neutral cooking oil
  • 2 tsp lemon juice
  • 1/2 tsp salt (or to taste)
  • 10 curry leaves (optional)

Instructions

  1. Heat oil in a large pan over medium heat. Add mustard seeds and sesame seeds. Let sizzle and pop for a few seconds. Add curry leaves. Stir.
  2. Add carrots and salt. Cook for 2 minutes under medium heat, to slightly warm the carrots, not cook them.
  3. Add lemon juice. Mix well and serve at room temperature.
