Carrot Sambharo
Carrot sambharo is a lightly stir-fried, Gujarati carrot salad. This sambharo sticks to the traditional flavors of a sambharo, with a vaghar of mustard seed and curry leaf.

Ingredients
- 1/2 pound carrots (peeled and grated)
- 1-2 green chilies (sliced)
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- 1 Tbsp neutral cooking oil
- 2 tsp lemon juice
- 1/2 tsp salt (or to taste)
- 10 curry leaves (optional)
Instructions
- Heat oil in a large pan over medium heat. Add mustard seeds and sesame seeds. Let sizzle and pop for a few seconds. Add curry leaves. Stir.
- Add carrots and salt. Cook for 2 minutes under medium heat, to slightly warm the carrots, not cook them.
- Add lemon juice. Mix well and serve at room temperature.
