Dal Chawal : Pot in Pot Rice and Dal
Dal Chawal, or Dal Bhat, is a simple, hearty comfort food of lentils and rice.

Ingredients
- For the Rice
- 1 1/2 cups rice
- 2 cups water (use more for softer rice)
- 1 tsp ghee
- Salt (to taste)
- For the Dal
- 3/4 cup masoor dal (or dal of choice)
- 1 Tbsp ghee or oil
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/8 tsp hing (optional)
- 1/2 tsp salt (to taste)
- Lemon juice
- 2 1/2 cups water
Instructions
- Rinse the rice until the water runs clear, at least 3 times.
- Add the rice and water to a pot that will fit inside the Instant Pot.
- Add salt and ghee. Cover and set aside.
- Rinse the dal.
- Heat oil on saute mode of Instant Pot. Add cumin and hing. Let it sizzle for about 10 seconds, then add turmeric powder.
- Add rinsed dal, salt, and water.
- Insert a trivet to raise the rice pot above the dal. The rice pot should not be touching the water.
- Cover and cook on High Pressure for 6 minutes, followed by a natural pressure release for 15 minutes.
- Finish with a squeeze of lemon juice.
