Indian Chicken Fried Rice (Chicken Chopper Rice)
Indian style Chicken fried rice, or “Chicken Chopper Rice”, is a great leftover rice recipe. It’s a type of rice commonly found on the streets of Bombay and all over India.

Ingredients
- 1 Tbsp oil (any neutral oil with a high point like avocado, peanut, or vegetable oil)
- 3/4 lb chicken (chopped in ½” cubes)
- 1 tsp ginger (grated or in a paste)
- 1/2 tsp red chili powder
- 1 egg
- 3/4 cup chopped onion
- 1-2 green chilies (chopped)
- 1-2 Tbsp red or green bell pepper (sliced)
- 1/2 tsp salt
- 3 cups cooked basmati rice
- 2 Tbsp water or soy sauce
Instructions
Heat oil on medium-high heat in a wok or large skillet. Add chicken, red chili powder, ginger paste, 1/2 of the salt. Cook, stirring often.
- Add egg, and cook.
- Add sliced onion, green chili, bell pepper and sliced garlic.
- Add salt, rice, and 2 Tbsp water or soy sauce.
- Mix well and serve. Garnish with chives.
