Indian Chicken Fried Rice (Chicken Chopper Rice)

Indian style Chicken fried rice, or “Chicken Chopper Rice”, is a great leftover rice recipe. It’s a type of rice commonly found on the streets of Bombay and all over India.

Indian Chicken Fried Rice (Chicken Chopper Rice)

Ingredients

  • 1 Tbsp oil (any neutral oil with a high point like avocado, peanut, or vegetable oil)
  • 3/4 lb chicken (chopped in ½” cubes)
  • 1 tsp ginger (grated or in a paste)
  • 1/2 tsp red chili powder
  • 1 egg
  • 3/4 cup chopped onion
  • 1-2 green chilies (chopped)
  • 1-2 Tbsp red or green bell pepper (sliced)
  • 1/2 tsp salt
  • 3 cups cooked basmati rice
  • 2 Tbsp water or soy sauce

Instructions

  1. Heat oil on medium-high heat in a wok or large skillet. Add chicken, red chili powder, ginger paste, 1/2 of the salt. Cook, stirring often.

  2. Add egg, and cook.
  3. Add sliced onion, green chili, bell pepper and sliced garlic.
  4. Add salt, rice, and 2 Tbsp water or soy sauce.
  5. Mix well and serve. Garnish with chives.
