Dhebra, A Traditional Gujarati Bread (Bajra na Debhra)

Ingredients

  • 1 1/2 cup Bajra no lot (pearl millet flour)
  • 1/2 cup whole wheat flour
  • 2 tbsp ghee or vegetable oil
  • 1 bunch chopped methi bhaji (fresh fenugreek leaves)
  • 1-2 green chillies
  • 1 " ginger
  • 1 tsp salt
  • 1/2 tsp turmeric
  • 1/2 tsp red chili powder
  • 1/4 cup yogurt
  • 2 tbsp jaggery
  • 1 1/2 tsp sesame seeds
  • 2 garlic cloves

Instructions

  1. In a wide bowl, add wheat flour and ghee. Mix well.
  2. Add bajra flour. Mix.
  3. Add the dry masala (spices).
  4. Make a paste with garlic and ginger by crushing or grating them together. Add the garlic-ginger paste and yogurt to the dough.

  5. Let the dough rest for 30 minutes, wrapped in plastic or covered with a damp towel.
  6. Roll all of the dough into a cylinder. Break off pieces and roll into golf-ball size pieces.

  7. On a piece of plastic, flatten the balls by patting them down or rolling them out. Add small amounts of water if needed. Top with sesame seeds and fry.

  8. To fry, add the discs you created in the last step to heated frying oil. Take them out when they are brown, they should puff up. Place them on a cooling rack or paper towels.
