Garam Masala Hobo Packets

Ingredients

  • 1/4 cup chopped bell pepper
  • 1 potato (cut up into 1/2 inch cubes)
  • 1/2 block of tofu (cut up into 1 inch cubes)
  • 1/4 cup summer squash
  • 1/2 onion (sliced)
  • 2 garlic cloves (peeled but left whole)
  • hand full of snap peas
  • few sprigs of fresh cilantro
  • 1/4 tsp ghee (or oil of choice)
  • 1/2 tsp garam masala
  • 1/2 tsp cumin (powder)
  • pinch of chili powder
  • salt (to taste)

Instructions

  1. Light the charcoal and let it get nice and hot. About 20 to 30 minutes.
  2. Tear a large piece of heavy duty foil. At least 18 inches long. And lay it out on a flat surface.
  3. Pile all the ingredients onto the middle of the foil. Toss to mix the spices.
  4. Grab the two long sides of the foil and line them up. Roll then down together to form a tight seal.
  5. Roll the other two sides in to make a packet.
  6. Place the packet onto the hot coals with the seam side up.
  7. Cook for about 30 to 45 minutes. Until the potatoes are cooked through.
  8. Garnish with more fresh cilantro.
