Paneer Bhurji

Ingredients

  • 2 tbsp ghee or vegetable oil
  • 1 tsp cumin
  • 1 medium onion finely chopped
  • 2 tomatoes finely chopped
  • 1 tsp ginger grated
  • 2 green chillies
  • 1 tsp turmeric
  • ½ tsp chili powder
  • 1 tsp kasoori methi (fenugreek)
  • 12 oz paneer grated or finely chopped
  • ¼ cup cilantro chopped
  • 2 tbsp milk
  • salt to taste

Instructions

  • Heat ghee. Add cumin, allow to toast until fragrant, about 10 seconds.
  • Add onion, cook until translucent. Add ginger, red chili powder, and turmeric.
  • Add tomatoes and salt. Cook until tomatoes turn jammy and the oil begins to separate.
  • Add green chili. Add paneer and cook for 3 minutes.
  • Add kasoori methi and milk if using store-bought paneer. Stir.
  • Top with cilantro and serve.

Notes

Store-bought paneer tends to be much drier than homemade, so it helps to add a little milk at the end to add back a little creaminess.
