This south Indian version of a vaghar add dal for crunch and nutiness

South Indian Vaghar

Ingredients

  • 1 tbsp ghee
  • 1 tsp mustard seeds
  • 1/8 tsp hing (asafoetida)
  • 1 red chili
  • 8 curry leaves
  • 1/2 tsp urad dal
  • 1/2 tsp chana dal
  • 1 shallot
  • 1/8 cup water
  • 2 cups cooked potatoes or other vegetable, chopped

Instructions

  1. Heat the oil in a pan over medium-high heat

  2. Add mustard seeds

  3. Allow to fry until they begin to brown and aroma becomes strong

  4. Add remaining ingredients, in order, 1 by 1 allowing each to cook at little in between.

  5. Mix in cooked potatoes or other vegetables, allowing them to cook a little bit so the flavors get integrated.

  6. Add water, stir and allow it to boil away.
