Cilantro Vaghar

Ingredients

  • 2 tbsp ghee
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric
  • 1/4 tsp hing (asofetida)
  • 8 curry leaves
  • 2 cloves garlic (chopped)
  • 2 tbsp cilantro
  • 2 cups cooked potatoes or other vegetable, chopped

Instructions

  1. Heat the oil in a pan over medium-high heat

  2. Add cumin and mustard seeds

  3. Allow to fry until they begin to brown and aroma becomes strong

  4. Add turmeric and allow to cook for a few seconds. Then add hing and allow to cook a little more. Repeat with curry leaves, garlic and finally cilantro.

  5. Mix in cooked potatoes or other vegetables, allowing them to cook a little bit so the flavors get integrated.
